Lemony Minted Carrot Salad

SALAD INGREDIENTS:
  • 2 cups peeled sliced small carrots (about 1 lb.)
  • 2 tablespoons golden raisins
  • 1/2 small red onion, chopped
  • 2 tablespoons chopped toasted walnuts
  • 1 cup parsley leaves
LEMON MINT DRESSING INGREDIENTS:
  • 2 tablespoons rice vinegar
  • 3 tablespoons virgin olive oil
  • 1 clove garlic, finely chopped
  • Juice and grated zest of 1 organic lemon
  • 1 tablespoon finely chopped fresh mint leaves
  • 1/4 teaspoon kosher or sea salt
  • 1/4 teaspoon freshly ground black pepper
PREPARATION
  1. To prepare lemon mint dressing, combine all dressing ingredients in a jar. Shake well to emulsify, and set aside.
  2. In a serving bowl combine salad ingredients and toss gently with dressing and serve.

Chilled Green Goddess Soup

Ingredients:
  • 4 cups vegetable broth, chilled
  • 1 bunch cilantro, stemmed
  • 1 bunch flat Italian parsley, stemmed
  • 1 bunch spinach, steamed and shredded
  • 1 avocado, diced
  • 2 cloves garlic, chopped
  • 1 red onion, coarsely chopped
  • Approx. 1/2 teaspoon kosher or sea salt
  • Approx. 1/2 teaspoon freshly ground black pepper
  • 2 tablespoons coarsely grated firm Italian cheese, such as pecprino or Asiago, for garnish
PREPARATION In a food processor or blender, combine all the above ingredients except salt and pepper. Process to desired consistency (chunky or smooth). Add salt and pepper to taste. Serve at once with cheese garnish.

Lettuceless Summer Salad

Serves 6

SALAD INGREDIENTS:
  • 1 medium clove garlic
  • 1 each red, yellow, and green bell peppers cored and chopped
  • 1 whole cucumber halved and then sliced
  • 6 medium sized button mushrooms, sliced
  • 15 Kalamata olives, pitted and chopped
  • 1 1/2 cup cherry tomatoes
  • 1/2 red onion sliced into rings
  • 4 oz. package Feta crumbled
DRESSING INGREDIENTS:
  • 2 tablespoons vinegar
  • 1/4 cup olive oil
  • 1 freshly squeezed lemon
PREPARATION
  1. Peel garlic clove, slice off the tip of one end to expose fresh garlic and rub the sides and bottom of salad serving bowl. Mince garlic and set aside.
  2. Combine dressing ingredients adding in the minced garlic and set aside.
  3. Combine salad ingredients in garlicy serving bowl and toss gently with feta and dressing. Allow 10 minutes for salad flavors to combine before serving.

Cole Slaw Delight

Serves 6

SLAW INGREDIENTS:
  • 1 pkg. (16 oz.) cabbage slaw
  • 1 cup pineapple chunks
  • 1/2 cup dried cranberries, chopped
  • 1/2 cup sliced almonds
  • 1 cup Colby-Jack cheese, diced into small cubes
DRESSING INGREDIENTS:
  • 1/4 cup Mayo
  • 1/2 freshly squeezed lemon
  • 1 tbsp. sugar
PREPARATION Mix slaw ingredients together in large bowl and set aside. Combine dressing in small bowl then pour over slaw. Mix and serve.

Very Quick Green Garlic Soup

Serves 4 to 5

Ingredients:
  • 1 pound steamed green peas, green beans, or broccoli
  • 8 to 12 Purple Tip garlic cloves
  • 1 pound red potatoes, peeled and boiled until tender
  • 6 cups rich chicken stock
  • Salt and Pepper to taste
PREPARATION
  1. Put the green vegetables in a blender with the garlic. Blend.
  2. Add the potatoes and blend.
  3. Add the stock, salt and pepper. Blend at high speed.
  4. Stir and serve.
This soup reheats well. If you want creamier soup, add 1/2 cup warm half-and-half. To intensify the green color, blend in a handful of chopped fresh flat-leaf parsley. Add potatoes to thicken, or stock to thin.
